Coombe Castle’s Coastal Cheddar is matured for 15-18 months in the salty sea air of the Jurassic Coast. It’s a rich, rugged and mature cheddar, often characterized with a distinctive crunch, which are a result of the calcium lactate crystals which form naturally as the cheese matures. This maturation process bestows it with its rich and intense flavour but the culture used also adds a contrasting subtle, sweet, top note.
